The Hollandsche Meesters cooperative is a unique cheese factory that processes each type of milk separately. Depending on the grass and breed specific characteristics, a separate cheese is made from each type of milk, whereby the non-skimmed milk is always processed in a breed-specific and farmer-specific manner. They make cheese in a traditional way, supported by modern techniques. The ripening of the cheese is largely done by Meester-Affineurs, who ripens the cheese with a natural and edible crust.
“The equipment was built by Scherjon in 2016, whereby we deliberately chose one partner who builds and installs all installations (Pasteur, CIP, Cheese vat, Pre-press, Pressing tables and Brine conditioning equipment) in-house. The pragmatic approach and broad knowledge of technology have laid the foundation for choosing a single point of contact, which has also led to the fact that not only the people behind Scherjon but also the purchased technology ensures short lines and good communication between the different machines, tailored to the various processes. The equipment is reliable, which is of great economic importance since we make cheese several times a day. “
