The Hollandsche Meesters cooperative is a unique cheese factory that processes each type of milk separately. Depending on the grass and breed specific characteristics, a separate cheese is made from each type of milk, whereby the non-skimmed milk is always processed in a breed-specific and farmer-specific manner. They make cheese in a traditional way, supported by modern techniques. The ripening of the cheese is largely done by Meester-Affineurs, who ripens the cheese with a natural and edible crust.
